  • 2 cups graham cracker crumbs
  • 1/2 cup melted butter
  • 3 (8 oz) packages cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup sour cream
  • 1/2 cup heavy cream
  • 1 cup cherry pie filling
  • Fresh cherries for garnish
  • Whipped cream for garnish

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter. Press into a 9-inch springform pan to form the crust.
  3. In a large bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth.
  4. Add eggs one at a time, beating well after each addition.
  5. Blend in sour cream and heavy cream until smooth.
  6. Pour half of the batter over the crust.
  7. Spoon half of the cherry pie filling over the batter.
  8. Add the remaining batter, then spoon the remaining cherry pie filling on top.
  9. Swirl with a knife for a marbled effect.
  10. Bake for 50-60 minutes or until the center is almost set.
  11. Cool completely before refrigerating for at least 4 hours or overnight.
  12. Garnish with fresh cherries and whipped cream before serving.

Notes

For best results, allow the cheesecake to chill overnight before serving. This enhances the flavors and texture. Variations include using different fruit toppings or adding a chocolate swirl.
