  • 8 oz cream cheese, softened
  • 2 cups fresh blackberries
  • 1/2 cup sugar
  • 1 tbsp lemon juice
  • 1 1/2 cups heavy cream, whipped to stiff peaks
  • 2 tsp gelatin, dissolved in 3 tbsp water
  • 1 cup fresh blackberries
  • 1/4 cup blackberry jam
  • Whipped cream for decoration

Instructions

  1. Prepare the Crust: Combine chocolate cookie crumbs, melted butter, sugar, and ground dried blackberries. Press into a 9-inch springform pan and chill for 30 minutes.
  2. Make the White Chocolate Layer: Melt white chocolate with heavy cream over low heat. Let cool slightly, then beat in softened cream cheese. Spread over the crust and refrigerate for 1 hour.
  3. Prepare the Blackberry Mousse: Puree blackberries with sugar and lemon juice, strain, and heat. Stir in dissolved gelatin. Let cool, then fold in whipped cream. Spread over the white chocolate layer and refrigerate for 4 hours.
  4. Decorate: Mix blackberries with blackberry jam and spread over the mousse. Decorate with whipped cream.

Notes

Serve chilled with fresh mint and extra blackberries for a stunning presentation. Store in the fridge for up to 3 days or freeze for up to 2 months.
