- 1 tbsp lemon juice
- 1 1/2 cups heavy cream, whipped to stiff peaks
- 2 tsp gelatin, dissolved in 3 tbsp water
- 1 cup fresh blackberries
- 1/4 cup blackberry jam
- Whipped cream for decoration
Instructions
- Prepare the Crust: Combine chocolate cookie crumbs, melted butter, sugar, and ground dried blackberries. Press into a 9-inch springform pan and chill for 30 minutes.
- Make the White Chocolate Layer: Melt white chocolate with heavy cream over low heat. Let cool slightly, then beat in softened cream cheese. Spread over the crust and refrigerate for 1 hour.
- Prepare the Blackberry Mousse: Puree blackberries with sugar and lemon juice, strain, and heat. Stir in dissolved gelatin. Let cool, then fold in whipped cream. Spread over the white chocolate layer and refrigerate for 4 hours.
- Decorate: Mix blackberries with blackberry jam and spread over the mousse. Decorate with whipped cream.
