Homemade Moose Tracks Ice Cream is a delightful frozen treat featuring creamy vanilla ice cream swirled with peanut butter and chocolate fudge, loaded with mini peanut butter cups. A perfect indulgence for any occasion!

- 2 cups heavy cream
- 1 cup whole milk
- 3/4 cup granulated sugar
- 1 tbsp vanilla extract
- A pinch of salt
- 4 large egg yolks
- 1/2 cup peanut butter
- 1/2 cup chocolate fudge sauce
- 1/2 cup mini peanut butter cups, chopped
Instructions
- In a medium saucepan, combine heavy cream, milk, sugar, and a pinch of salt. Heat over medium heat, stirring until the sugar dissolves.
- In a bowl, whisk the egg yolks. Gradually add the warm cream mixture while whisking constantly.
- Return to the saucepan and cook over medium heat, stirring until it thickens slightly. Strain through a fine-mesh sieve and stir in vanilla extract. Chill for at least 4 hours.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions.
- During the last few minutes of churning, add the chopped mini peanut butter cups.
- Transfer to a bowl and gently swirl in the peanut butter and chocolate fudge sauce.
- Cover and freeze for at least 4 hours before serving.
