  • 1 pound ground beef Can substitute with ground turkey or chicken.
  • 1 small onion, chopped
  • 1 pack taco seasoning
  • 1 can refried beans
  • 1 can cream of mushroom soup, undiluted
  • 1/2 cup sour cream
  • 1 pack large flour tortillas Can substitute with corn tortillas for a gluten-free option.
  • 2 1/2 cups shredded Mexican blend cheese Use a good quality cheese for best results.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is no longer pink. Make sure to drain any excess fat.
  • Stir in the taco seasoning and refried beans; mix well and let it heat through for about 2-3 minutes.
  • In a separate bowl, blend the undiluted cream of mushroom soup with sour cream until smooth.
  • In a baking dish, spread half of the creamy mixture at the bottom. Tear the flour tortillas as needed and arrange them over the soup mixture.
  • Layer half of the seasoned beef mixture over the tortillas and sprinkle with 1 cup of shredded cheese.
  • Repeat the layering with the remaining creamy soup mixture, tortillas, beef, and top with the remaining cheese.
  • Place the casserole in the preheated oven and bake for 20 minutes or until the cheese is melted and bubbly.

Notes

For toppings, consider sour cream and fresh cilantro. Store leftovers in an airtight container for up to 3 days in the fridge, or freeze for up to two months. Reheat at 350°F until heated through.
