In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Mix until well-combined, then press the mixture firmly into the bottom of a 9-inch springform pan. Refrigerate while you prepare the filling.
In a large mixing bowl, using a hand mixer, combine the softened cream cheese and powdered sugar, mixing until creamy and smooth. Add the vanilla extract and mix until combined.
In another bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture until well incorporated.
Pour half of the cream cheese mixture over the prepared crust. Layer the sliced bananas and strawberries on top, then pour the remaining cream cheese mixture over the fruits.
Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or until set.
