Instructions
Preheat your oven to 425°F (220°C).
Wash the red potatoes thoroughly and cut them into bite-sized pieces.
In a large skillet over medium heat, melt the unsalted butter. Stir frequently until it turns a golden brown color and releases a nutty aroma—about 5 minutes.
In a large mixing bowl, combine the cut potatoes with the browned butter. Add salt and pepper to taste, mixing thoroughly.
Spread the seasoned potatoes evenly onto a baking sheet. Bake for 25-30 minutes, stirring halfway through.
Remove the potatoes from the oven and sprinkle the grated Parmesan cheese over the hot potatoes. Return to the oven for an additional 5 minutes.
Once out of the oven, sprinkle with fresh parsley if desired. Serve warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through.
