  • 2 cups All-purpose flour
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1 cup Unsalted butter, melted
  • 1 cup Brown sugar
  • 1/2 cup Granulated sugar
  • 2 large Eggs
  • 1 tsp Vanilla extract
  • 2 cups Chocolate chips

Cheesecake Filling

  • 8 oz Cream cheese, softened
  • 1/4 cup Granulated sugar
  • 1/2 tsp Vanilla extract

Optional Serving Suggestions

  • 1 glass Cold milk Pairs well with the cookies
  • 1 scoop Vanilla or chocolate ice cream
  • Drizzle of chocolate or caramel sauce

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, combine melted butter, brown sugar, and granulated sugar. Mix well. Add eggs one at a time, then stir in vanilla extract.
  • Gradually mix in dry ingredients. Fold in chocolate chips.
  • In a separate bowl, beat cream cheese, granulated sugar, and vanilla extract until smooth.
  • Scoop 1 tablespoon of cookie dough, flatten slightly, and place 1 teaspoon of cheesecake filling in the center. Cover with more dough and roll into a ball.

Baking

  • Place on baking sheet with space between each.
  • Bake for 10–12 minutes until edges are golden.
  • Cool slightly before transferring to wire rack.

Notes

Store in an airtight container at room temperature for up to 5 days. Freeze for up to 2 months between parchment layers. Reheat in microwave for 10–15 seconds or in a toaster oven at 300°F for 5 minutes.
