Main Ingredients

  • 3 pounds ground beef Can substitute with ground turkey or chicken.
  • 1 box small pasta shells Any pasta shape can be used.
  • 1 block Velveeta cheese Cut into cubes for easier melting.
  • 1 handful sharp cheddar cheese Feel free to mix in other cheese varieties.
  • 2 packs taco seasoning Adjust spice levels according to preference.
  • 1 can original Rotel Adds a nice heat and flavor.

Preparation

  • In a large pot, cook the ground beef over medium heat until it’s browned and cooked through. Don’t forget to drain any excess fat!
  • Add the taco seasoning according to the package instructions, mixing well to ensure the beef is fully coated in flavor.
  • In a separate pot, cook the pasta shells following the package directions. Drain the pasta once it’s al dente.
  • In the pot with the beef, gently fold in the drained pasta shells, mixing them together.
  • Cut the Velveeta cheese into cubes and stir it into the pot until it has melted and created a creamy sauce that envelops the pasta and beef.
  • Stir in the sharp cheddar cheese until melted, then add the can of Rotel, mixing everything together nicely.
  • Ladle portions onto plates and enjoy while hot!

Notes

Store leftovers in an airtight container in the fridge for up to 3 days, or freeze for up to a month. Reheat with a splash of milk or broth if dry.
