  • 1 medium Vidalia onion, chopped
  • 8 tbsp butter
  • 1 can (10 oz) cream of chicken or mushroom soup Can be substituted with Greek yogurt for a lighter option.
  • 2 cups shredded cheddar cheese Feel free to add more if you're a cheese lover.
  • Salt and pepper, to taste

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large pot, melt the butter over medium heat and add the chopped onion, stirring until it becomes translucent, about 5 minutes.
  • Toss in the chopped cabbage, season with salt and pepper, and cook until tender, about 10 minutes, stirring occasionally.
  • Stir in the cream of chicken or mushroom soup until well combined.
  • Pour the cabbage mixture into a greased baking dish, spreading it evenly.
  • Sprinkle the shredded cheddar cheese generously over the top.

Baking

  • Place the baking dish in the preheated oven and bake for about 25-30 minutes, or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving hot.

Notes

This casserole pairs beautifully with roasted chicken or grilled steak. A crisp salad or steamed veggies can provide a lovely contrast to the creamy dish. Leftovers can be stored in an airtight container for up to 4 days or frozen for up to 3 months.
