Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or olive oil.
In a large bowl, mix together the cooked shredded chicken, refried beans, 1 cup of shredded cheese, salsa, cumin, garlic powder, onion powder, and a pinch of salt and pepper.
Take a flour tortilla and place a generous scoop of the filling mixture in the center. Fold the sides of the tortilla inward and then roll it up tightly from the bottom.
Place the chimichangas seam side down on the prepared baking sheet.
Spray the tops lightly with cooking spray to ensure they get a nice golden color while baking.
Bake for 20-25 minutes, or until the chimichangas are golden brown and crispy.
Serve hot, garnished with extra cheese or your favorite toppings!
Notes
Consider using leftovers for the chicken. Adjust seasonings to taste and use soft flour tortillas for easier rolling.
