  • 2 cups cooked shredded chicken
  • 1 cup refried beans
  • 4 pieces flour tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper
  • as needed cooking spray or olive oil

Instructions
 

  • Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with cooking spray or olive oil.
  • In a large bowl, mix together the cooked shredded chicken, refried beans, 1 cup of shredded cheese, salsa, cumin, garlic powder, onion powder, and a pinch of salt and pepper.
  • Take a flour tortilla and place a generous scoop of the filling mixture in the center. Fold the sides of the tortilla inward and then roll it up tightly from the bottom.
  • Place the chimichangas seam side down on the prepared baking sheet.
  • Spray the tops lightly with cooking spray to ensure they get a nice golden color while baking.
  • Bake for 20-25 minutes, or until the chimichangas are golden brown and crispy.
  • Serve hot, garnished with extra cheese or your favorite toppings!

Notes

Consider using leftovers for the chicken. Adjust seasonings to taste and use soft flour tortillas for easier rolling.
