Equipment

  • Baking Dish
  • Mixing Bowl

Ingredients

Cinnamon Roll Ingredients

  • 2 cans refrigerated cinnamon rolls (17.5 oz each; icing reserved)
  • 2 tbsp melted butter (for greasing and drizzling)
  • 4 large eggs (room temperature for best mixing)
  • 1/3 cup milk (any milk; whole milk yields richest texture)
  • 1 tbsp ground cinnamon (for custard)
  • 1 tsp vanilla extract

Icing Ingredients

  • 2 containers reserved cinnamon roll icing (from the cans; use for drizzling and mixing)
  • 1/2 cup powdered sugar (for icing mix)
  • 2 tbsp cream cheese (softened for icing mix)
  • 1 tbsp milk (for icing mix to thin)

Optional Extra Icing

  • 3/4 cup powdered sugar
  • 3 oz cream cheese (softened)
  • 1 1/2 tbsp milk (adjust to desired consistency)

Instructions

  • Preheat oven to 350°F. Grease a 9×13-inch baking dish and drizzle the 2 tbsp melted butter evenly across the bottom.
  • Cut each cinnamon roll into sixths and spread the pieces in an even layer in the prepared baking dish so they touch but aren’t overly packed.
  • In a medium bowl, whisk together 4 large eggs, 1/3 cup milk, 1 tbsp cinnamon, and 1 tsp vanilla extract until smooth and slightly frothy. Pour this custard evenly over the cinnamon roll pieces, pressing gently so the dough soaks up the liquid.
  • Bake for 30–35 minutes, or until the top is golden brown and the center is set but still moist. A toothpick in the center should come out mostly clean with a few moist crumbs.
  • While the casserole bakes, combine the 2 containers reserved cinnamon roll icing, 1/2 cup powdered sugar, 2 tbsp softened cream cheese, and 1 tbsp milk in a small bowl. Stir until smooth and creamy. If you want extra icing, mix 3/4 cup powdered sugar, 3 oz softened cream cheese, and 1 1/2 tbsp milk separately to drizzle more liberally.
  • Once the casserole is baked, remove from the oven and let rest 5 minutes. Drizzle the prepared icing over the warm casserole so it melts into the crevices. Serve immediately and enjoy.
