Ingredients
  

For the Salmon Bites

  • 1.5 pounds salmon fillets (skin removed, cut into bite-sized pieces) Fresh salmon yields the best flavor.
  • 1 tablespoon olive oil For cooking the salmon.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 teaspoon cayenne pepper (optional) For extra heat.

For the Bang Bang Sauce

  • 0.5 cup mayonnaise Can substitute with Greek yogurt.
  • 0.25 cup Thai sweet chili sauce
  • 1 tablespoon sriracha sauce Adjust for preferred heat level.
  • 1 tablespoon honey
  • 1 tablespoon lime juice (freshly squeezed)

For Garnish

  • to taste fresh parsley or cilantro, chopped
  • to taste green onions, sliced
  • to taste sesame seeds

Instructions
 

Preparation

  • Pat the salmon fillets dry using paper towels and cut them into 1-inch bite-sized cubes.
  • In a large bowl, drizzle the salmon pieces with olive oil and sprinkle with garlic powder, onion powder, smoked paprika, salt, black pepper, and optional cayenne pepper. Toss gently to coat.

Making the Sauce

  • In a separate bowl, whisk together the mayonnaise, Thai sweet chili sauce, sriracha, honey, and lime juice until smooth. Adjust the heat as desired.

Cooking

  • Heat a large non-stick skillet over medium-high heat with a small amount of olive oil. Once hot, cook the seasoned salmon in a single layer for 2-3 minutes on each side until golden and crispy.
  • Transfer the cooked salmon to a plate lined with paper towels to absorb excess oil.

Serving

  • Drizzle the Bang Bang sauce over the crispy salmon bites or toss them in a bowl until coated.
  • Garnish with chopped parsley, green onions, or sesame seeds and serve immediately.

Notes

Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in the oven at 350°F for 10-15 minutes for optimal texture. You can also freeze individual pieces for up to a month.
