Ingredients
  

Main ingredients

  • 1 pound beef or turkey Use ground beef or ground turkey.
  • 1 large sweet onion, diced
  • 3 cloves garlic, minced
  • 2 cans diced tomatoes (15 oz each)
  • 1 can tomato paste
  • 2-3 cups beef broth Use vegetable broth for a vegetarian version.
  • 1 can kidney beans (15 oz) Rinse before adding.
  • 1 can red beans (15 oz) Rinse before adding.
  • 1 large yellow bell pepper, diced

Spices & Seasoning

  • 3 tablespoons chili powder Adjust according to spice preference.
  • 1 tablespoon brown sugar (optional) For a touch of sweetness.
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/4 teaspoon chili flakes (optional) For an extra kick.
  • 1/2 teaspoon black pepper
  • to taste Salt Season according to preference.

Preparation

  • Brown the meat: In a large pan over medium heat, brown the beef or turkey until no pink remains. Drain any excess fat.
  • Sauté the veggies: Add the diced onion to the pan, cooking until softened (about 5 minutes). Add garlic and sauté for another minute.
  • Transfer to crockpot: Scoop the onion and meat mixture into your crockpot.
  • Add the rest: Pour in the beef broth, diced tomatoes, tomato paste, kidney beans, red beans, and diced yellow bell pepper.
  • Season the chili: Sprinkle in your chili powder, brown sugar, cumin, paprika, chili flakes, black pepper, and salt. Stir well to combine.
  • Cook away: Cover your crockpot and set it to low for 8 hours or high for 4 hours.
  • Serve: Once it’s cooked to perfection, give it a final stir, taste, and adjust seasoning if needed. Enjoy a bowl straight from the pot!

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months. To reheat, warm on the stove or microwave, adding broth if necessary.
