For the Cake

  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 cups granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 2 large eggs (room temperature)
  • 1 cup whole milk (room temperature)
  • 1/2 cup vegetable oil
  • 2 tsp pure vanilla extract
  • 1 cup boiling water
  • 1 1/2 cups fresh blackberries (plus extra for garnish)

For the Ganache

  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate (chopped or chips)

Preparation

  • Preheat the oven to 350°F (177°C). Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper.
  • In a large bowl, sift together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  • In another bowl, whisk together eggs, milk, vegetable oil, and vanilla extract until smooth. Gradually mix with the dry ingredients until just combined.
  • Carefully stir in boiling water until the batter is smooth.
  • Gently fold in fresh blackberries.

Baking

  • Pour the batter evenly into the prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  • Let cakes cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Ganache and Assembly

  • To make the ganache, heat the heavy cream in a saucepan until it simmers. Pour over chopped chocolate and stir until smooth.
  • Assemble the cake by layering one cake on a serving plate. Spread ganache on top, add the second layer, and frost with remaining ganache.
  • Garnish with fresh blackberries and edible flowers. Optionally refrigerate for 30 minutes before serving.

Notes

Ensure all ingredients are at room temperature for better mixing. Be gentle while folding in the blackberries to prevent breaking them. For a richer flavor, replace boiling water with fresh brewed coffee. If the ganache hardens too much, gently reheat it to soften before using. For customization, you can add chocolate chips to the batter or swirl in blackberry jam.
