  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 1 small onion, finely diced
  • 1 each green or red bell pepper, diced
  • 2 stalks celery, diced
  • 2 cloves garlic, minced
  • 1.5 cups long-grain white rice (uncooked)
  • 3 cups chicken broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 1 teaspoon Cajun seasoning
  • 0.5 teaspoon ground black pepper

Optional Garnish

  • to taste Green onions, chopped, for garnish

Preparation

  • Heat olive oil in a large skillet over medium heat.
  • Add ground beef and cook until browned, breaking it up as it cooks. Drain any excess fat.
  • Add onion, bell pepper, celery, and garlic to the skillet. Sauté for 3-5 minutes until softened and fragrant.
  • Stir in uncooked rice, cooking for 1-2 minutes to lightly toast it for enhanced flavor.
  • Sprinkle in the smoked paprika, dried thyme, Cajun seasoning, and pepper. Stir to combine, then pour in the chicken broth. Bring to a boil.
  • Lower the heat, cover, and let it simmer for 18-20 minutes, or until rice is tender and liquid absorbed.
  • Remove from heat, fluff the rice with a fork, and garnish with chopped green onions before serving.

Notes

For the best Dirty Rice, use fresh ingredients when possible. Don’t skip toasting the rice to add depth of flavor. Adjust spice levels to suit your taste.
