Ingredients
  

For the crust

  • 1.5 cups crushed graham crackers
  • 1/4 cup sugar
  • 1/3 cup unsalted butter, melted

For the cheesecake filling

  • 2 packages cream cheese, softened (8 ounces each)
  • 2/3 cup granulated sugar
  • 2 pieces eggs at room temperature
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon zest
  • 1/4 cup lemon juice
  • 1/4 cup lemon curd

Instructions
 

Preparation of the crust

  • Mix crushed graham crackers, sugar, and melted butter until well combined.
  • Press mixture firmly into the bottom of a greased 8x8 inch baking dish.

Baking the crust

  • Bake in a preheated oven at 325°F (163°C) for 10 minutes.
  • Allow to cool.

Making the cheesecake mixture

  • Beat softened cream cheese with granulated sugar until smooth.
  • Add eggs one at a time, mixing well after each addition.
  • Mix in vanilla, lemon zest, and lemon juice.
  • Pour cheesecake mixture over the prepared crust.

Adding the lemon swirl

  • Spoon lemon curd randomly over the cheesecake layer.
  • Use a toothpick or knife to swirl the curd into the cheesecake.

Final baking and cooling

  • Bake for 35-40 minutes or until the center is just set.
  • Cool completely, then refrigerate for at least 3 hours.
