  • 2 pieces English muffins, split
  • 2 tablespoons pizza sauce
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup chopped bell peppers Any color bell pepper can be used.
  • 1/4 cup cooked sausage or bacon Optional, feel free to omit for a vegetarian version.
  • 2 pieces eggs
  • to taste Salt and pepper
  • for garnish Chopped fresh basil or parsley For added color and flavor.

Preparation

  • Preheat your oven to 350°F (175°C).
  • Split the English muffins in half and place them cut side up on a baking sheet.
  • Spread about a tablespoon of pizza sauce on each muffin half.
  • Sprinkle the shredded mozzarella cheese generously over the sauce.
  • Top each muffin with chopped bell peppers and cooked sausage or bacon if using.
  • Carefully crack an egg onto each muffin half, seasoning lightly with salt and pepper.
  • Bake in the preheated oven for about 12-15 minutes, or until the eggs are cooked to your liking.
  • Garnish with fresh basil or parsley before serving.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days. To reheat, bake at 350°F (175°C) for 5-7 minutes. You can freeze uncooked assembled muffins for up to a month; bake from frozen without thawing.
