Ingredients

Main ingredients

  • 1 lb ground chicken
  • 1 cup seasoned breadcrumbs
  • 1 cup grated Parmesan cheese Plus extra for topping
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup chopped parsley Optional

Instructions

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine the ground chicken, seasoned breadcrumbs, grated Parmesan cheese, minced garlic, eggs, salt, and black pepper. Use your hands (or a spoon) to mix until well combined.
  • Transfer the meat mixture into a loaf pan. Shape it into a loaf, ensuring it’s even throughout for consistent cooking.
  • If you like, sprinkle some additional Parmesan cheese on top for an extra cheesy crust.

Cooking

  • Place the loaf pan in the preheated oven and bake for about 45 minutes, or until the meatloaf is cooked through, and the internal temperature reaches 165°F (74°C).
  • Once baked, remove it from the oven and let it rest for about 10 minutes before slicing. This helps to keep it juicy!
  • Slice and serve it warm, perhaps garnished with fresh parsley for a pop of color.

Notes

For an ideal serving experience, pair with sides like creamy mashed potatoes, roasted vegetables, or a refreshing green salad. Substitutions can include using turkey or lean beef instead of ground chicken. To retain moisture, consider adding a splash of milk or chicken broth if needed.
