Grandma's Lime Green Jello Salad

Ingredients
  

For the salad

  • 1 cup crushed pineapple, drained (reserve the juice)
  • 1 cup water (more or less as needed)
  • 2 packages lime Jello (3 oz each)
  • 1 cup mayonnaise
  • 1 cup evaporated milk (canned)
  • 1 cup small curd cottage cheese
  • 1 cup chopped walnuts

Preparation

  • Drain the crushed pineapple and reserve the juice.
  • In a saucepan, combine the reserved pineapple juice and enough water to make 1 cup of liquid. Bring it to a boil.
  • Remove the saucepan from heat and stir in the lime Jello until it fully dissolves.
  • Allow the mixture to cool until it has thickened slightly so that the other ingredients don’t sink.
  • Stir in the mayonnaise, evaporated milk, cottage cheese, and finally, the crushed pineapple. Mix until thoroughly combined.
  • Gently fold in the chopped walnuts.
  • Pour the mixture into a mold or serving dish and refrigerate until set, typically for 4 hours or overnight.

Serving

  • Once chilled and set, slice or scoop out servings and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3 to 5 days. Can be frozen in individual portions for longer storage.
