  • 1 piece grilled chicken breast, sliced Seasoned with garlic powder, sea salt, and black pepper
  • 2 cups romaine or mixed greens
  • 1/2 piece avocado, diced
  • 1/2 cup cherry tomatoes, chopped
  • 1/2 cup cucumber, sliced
  • 1/2 cup grilled corn
  • 1 tablespoon olive oil
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon chili flakes (optional)

Avocado Dressing Ingredients

  • 1/2 piece avocado
  • 1/4 cup Greek yogurt
  • 1 tablespoon lemon juice
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

Preparation

  • Season the chicken breast with garlic powder, sea salt, and black pepper.
  • Grill for about 5-6 minutes on each side until fully cooked. Allow it to rest, then slice into strips.

Prepare the Dressing

  • Blend together half an avocado with Greek yogurt, lemon juice, minced garlic, olive oil, salt, and pepper until smooth.

Assemble the Salad Bowl

  • In a large bowl, arrange romaine or mixed greens as the base.
  • Layer with diced avocado, chopped tomatoes, sliced cucumber, and grilled corn.

Top with Chicken & Dressing

  • Add the sliced grilled chicken on top of the arranged vegetables.
  • Drizzle with the prepared avocado dressing. Sprinkle chili flakes if desired.

Serve & Enjoy

  • Toss everything gently and serve immediately.

Notes

Store leftover salad in an airtight container without dressing for up to 2 days. To reheat chicken, use a microwave for 30 seconds or warm gently on the stovetop.
