  • 1 large head cabbage, chopped
  • 1 pound ground beef
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 stalks celery, chopped
  • 4 cups beef broth
  • 1 can (14.5 oz) diced tomatoes with their juice
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon paprika
  • 1 tablespoon olive oil

Preparation

  • In a large pot, heat the olive oil over medium heat.
  • Add the diced onions, sliced carrots, and chopped celery. Cook until the vegetables are softened, about 5-7 minutes.
  • Stir in the ground beef and cook until it is browned, breaking it up as it cooks.
  • Mix in the minced garlic and cook for an additional minute until fragrant.
  • Stir in the chopped cabbage, diced tomatoes (with their juice), 4 cups of beef broth, salt, pepper, and paprika.
  • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30-40 minutes until the cabbage is tender and the flavors meld together.
  • Enjoy hot and garnish with fresh herbs if desired.

Notes

Feel free to swap ground beef for ground turkey or chicken. You can add leftover veggies such as green beans or bell peppers. Allow the soup to simmer longer for deeper flavors. Leftovers can be stored in an airtight container for up to 4 days or frozen for up to 3 months.
