Ingredients
  

For the Marinade

  • 1 cup 1 cup pineapple juice
  • 1/4 cup 1/4 cup honey
  • 2 tablespoons 2 tablespoons soy sauce
  • 1 tablespoon 1 tablespoon olive oil
  • 1 teaspoon 1 teaspoon garlic powder
  • 1/2 teaspoon 1/2 teaspoon ground ginger
  • Salt and pepper to taste

For the Chicken

  • 4 pieces 4 boneless, skinless chicken breasts
  • Fresh pineapple slices, for garnish

Preparation

  • In a bowl, whisk together the pineapple juice, honey, soy sauce, olive oil, garlic powder, ginger, salt, and pepper.
  • Place the chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated.
  • Seal the bag or cover the dish and refrigerate for at least 2 hours. For best results, let it marinate overnight.

Grilling

  • Preheat the grill to medium-high heat.
  • Remove the chicken from the marinade and grill for 6-7 minutes per side, or until it’s fully cooked and has beautiful grill marks.
  • In the last few minutes of grilling, place fresh pineapple slices on the grill until they’re warm and slightly charred.
  • Serve the chicken topped with the grilled pineapple slices.

Notes

Marinate the chicken overnight for the best flavor. Be sure not to overcrowd the grill; give the chicken space to cook evenly. Use fresh pineapple for the best taste, but canned works in a pinch.
