  • 1 cup orzo pasta
  • 2 tablespoons olive oil
  • 1 pound chicken breast, diced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 zucchini diced
  • 1 red bell pepper diced
  • 1 cup broccoli florets
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional for heat)
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Cooking Steps

  • Boil orzo pasta according to package instructions. Drain and set aside.
  • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add diced chicken, garlic powder, salt, and black pepper. Cook until chicken is golden brown and fully cooked. Remove from skillet and set aside.
  • In the same skillet, add remaining olive oil. Add zucchini, bell pepper, and broccoli. Saute for 3-4 minutes until tender yet crisp.
  • Return the cooked orzo and chicken to the skillet. Stir in lemon juice, lemon zest, oregano, and red pepper flakes. Cook for another 2 minutes, mixing well.
  • Sprinkle with Parmesan cheese and garnish with fresh parsley. Serve warm.

Notes

Consider pairing with a crisp green salad or garlic bread. For beverages, a chilled glass of white wine or refreshing iced tea would complement this meal splendidly. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat with chicken broth or water to restore moisture.
