  • 3 cups frozen corn, thawed
  • 1 can (4 ounces) green chiles, drained
  • 1 cup sour cream
  • 1 cup mayonnaise
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green onions
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • Fresh cilantro, chopped, for garnish

Preparation

  • In a large mixing bowl, combine the corn, green chiles, sour cream, mayonnaise, red bell pepper, and green onions.
  • Stir in the chili powder, garlic powder, salt, and pepper until everything is well mixed.
  • Add the cheddar and Monterey Jack cheeses and mix until combined.
  • Transfer the mixture to a serving dish and refrigerate for at least 2 hours to allow the flavors to meld.
  • Before serving, sprinkle with chopped cilantro for a fresh touch.

Notes

Serve with tortilla chips or crackers. For extra creaminess, add more sour cream or mayonnaise. You can also adjust the spice by including diced jalapeƱos.
