Casserole Base

  • 1 bag Nacho Doritos, crushed Creates a crunchy base.

Filling

  • 2 cups shredded chicken or ground beef Choose based on preference.
  • 2 cups shredded cheese Add more for extra cheesiness.
  • 1 can (10.75 oz) cream of chicken soup
  • 1 can Rotel tomatoes, undrained Spice level can be adjusted.
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1/2 package taco seasoning Adjust to taste.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine shredded chicken or ground beef, shredded cheese, cream of chicken soup, undrained Rotel tomatoes, sour cream, milk, and taco seasoning.
  • Mix everything together until well combined.

Assembly

  • Layer crushed Nacho Doritos at the bottom of a baking dish.
  • Pour the creamy mixture over the Doritos, spreading it out evenly.
  • Sprinkle extra cheese on top.

Cooking

  • Place the casserole in the preheated oven and bake for 25-30 minutes, or until the cheese is bubbly and golden.
  • Let it cool for a few minutes before serving.

Notes

Pairs well with a fresh green salad, guacamole, or refried beans. For drinks, consider iced tea or light Mexican beer. Store leftovers in an airtight container for up to three days or freeze for up to three months.
