Mushroom Chicken Alfredo Lasagna

Ingredients
  

Lasagna Noodles

  • 9 pieces lasagna noodles, cooked al dente

Chicken

  • 2 cups cooked chicken, shredded

Mushrooms

  • 1 cup mushrooms, sliced

Alfredo Sauce

  • 2 cups Alfredo sauce

Cheese

  • 2 cups mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese, grated

Seasoning

  • to taste Salt and pepper
  • 1 tablespoon olive oil
  • for garnish Fresh parsley optional

Instructions
 

  • Preheat your oven to 375°F (190°C) to prepare it for baking.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and sauté until they are golden and tender, about 5-7 minutes. Season with salt and pepper.
  • In a large bowl, combine the shredded chicken, sautéed mushrooms, and Alfredo sauce. Stir until well mixed.
  • In a baking dish, spread a thin layer of the chicken and mushroom mixture on the bottom. Place three lasagna noodles over this layer. Spread a portion of the chicken mixture over the noodles, followed by a sprinkle of mozzarella cheese. Repeat layering, ending with a layer of noodles topped with remaining Alfredo mixture and mozzarella cheese.
  • Sprinkle grated Parmesan cheese over the top layer of mozzarella for an extra cheesy finish.
  • Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  • Once baked, remove the lasagna from the oven and let it sit for about 10 minutes before slicing. This allows it to set, making it easier to serve.
  • Garnish with fresh parsley before serving to add a pop of color and freshness!

Notes

Leftover Mushroom Chicken Alfredo Lasagna can be stored in an airtight container in the refrigerator for up to 3 days. For longer storage, it can be frozen for up to 2 months. To reheat, simply place it in a preheated oven at 350°F (175°C) until heated through, or microwave individual portions.
