Preparation

  • In a mixing bowl, beat the cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
  • Gently fold in the raspberries, being careful not to break them too much.
  • Spoon or pipe the cream cheese mixture into the mini phyllo shells.
  • Chill in the refrigerator for at least 1 hour to allow the flavors to meld and the filling to set.
