  • 16 ounces lean ground beef
  • 1 can pinto beans, drained
  • 1 can kidney beans, drained
  • 1 can black beans, drained
  • 1 cup diced onion
  • 1 cup diced bell pepper
  • 2 cloves garlic, minced
  • 1 cup barbecue sauce
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Preparation

  • In a skillet over medium heat, brown the lean ground beef until fully cooked. Drain excess fat.
  • In your slow cooker, add the cooked ground beef, drained beans, diced onion, diced bell pepper, minced garlic, barbecue sauce, chili powder, and a sprinkle of salt and pepper. Stir well to combine all the ingredients.

Cooking

  • Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours. Stir occasionally to make sure all the flavors meld together.
  • Before serving, taste the mixture and adjust seasoning if necessary. You may want to add a dash more barbecue sauce or some extra chili powder for added spice.

Serving

  • Enjoy your Cowboy Beans hot, topped with your favorite garnishes!

Notes

For variations, consider substituting ground turkey or chicken, adding jalapeƱos or cayenne for spice, and using different beans or vegetables.
