  • 1 cup strawberries, sliced
  • 1/2 cup crushed graham crackers

Preparation

  • In a mixing bowl, combine the softened cream cheese, granulated sugar, and vanilla extract using a hand mixer until smooth and creamy.
  • Slightly warm the soft taco shells in a microwave or on a skillet to make them pliable for filling.

Assembly

  • Spoon the cheesecake filling into each taco shell, being generous without overstuffing.
  • Top the filling with fresh sliced strawberries and sprinkle crushed graham crackers on top for crunch.
  • If desired, dollop a bit of whipped cream on top.
  • Present the tacos on a platter and serve immediately.

Notes

Store any leftovers in an airtight container in the fridge for up to 2 days. Add toppings just before serving for best results.
