  • 2 large large flour tortillas
  • 1 cup cooked chicken, shredded
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese, shredded
  • 1 tablespoon taco seasoning
  • 1 tablespoon oil (for frying)

Preparation

  • In a medium bowl, combine the shredded chicken with taco seasoning. Toss until the chicken is fully coated with the spices.
  • Heat a skillet over medium heat and add the oil. Place one flour tortilla in the skillet, allowing it to warm slightly.

Cooking

  • Sprinkle half of the cheddar and mozzarella cheese onto the tortilla.
  • Spread the seasoned chicken evenly over the cheese layer. Top it with the remaining cheese, and add the second tortilla on top.
  • Cook for about 4-5 minutes or until the bottom tortilla is golden brown and crispy. Carefully flip the quesadilla using a spatula, and cook for another 4-5 minutes until the second side is equally golden and the cheese has melted.
  • Remove the quesadilla from the skillet, let it cool for a minute, then cut it into wedges. Serve hot with sour cream and salsa on the side.

Notes

For best results, avoid overfilling the quesadilla. You can also substitute chicken with shredded beef or black beans for a vegetarian option. Store leftovers in an airtight container for up to 3 days or freeze for up to 1 month.
