Equipment

  • Baking Sheet
  • Large Skillet
  • Spatula

Ingredients

Tater Tots

  • 1 pound Tater Tots

Sausage Gravy Ingredients

  • 1 pound Breakfast Sausage Ideal for this recipe
  • 1/4 cup Flour
  • 2 cups Milk
  • Salt to taste
  • Pepper to taste

Optional Topping

  • 2-4 eggs Eggs optional, for topping

Instructions

  • Preheat your oven according to package instructions. Spread the tater tots on a baking sheet and bake until golden and crispy, typically around 20-25 minutes.
  • In a large skillet, cook the sausage over medium heat, breaking it apart with a spatula as it cooks. Continue until browned and fully cooked, about 5-7 minutes.
  • Once the sausage is cooked, sprinkle the flour over the top and mix well. Cook for about 1 minute to remove the raw flour taste. Gradually add in the milk, stirring constantly to avoid lumps. Continue cooking until the mixture thickens, about 3-5 minutes. Season with salt and pepper.
  • If you want to add eggs for a protein-packed topping, cook them to your liking—fried or poached works beautifully.
  • Layer crispy tater tots in a bowl, generously top with sausage gravy, and finish with a perfectly cooked egg, if you’re using one.

Notes

To keep leftovers fresh, cool completely before placing in an airtight container. Refrigerate for 3-4 days or freeze for up to 2 months.
