  • 1 large pineapple, peeled and cored Use ripe pineapple for best flavor.
  • 1 cup all-purpose flour Can substitute with gluten-free flour if needed.
  • 1/4 cup granulated sugar
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon Additional cinnamon for dusting.
  • 1 large egg
  • 3/4 cup milk Can substitute with coconut milk for a tropical twist.
  • to taste Additional cinnamon and sugar for dusting Experiment with adding nutmeg or cardamom.

Preparation

  • Slice the pineapple into rings about 1/2-inch thick.
  • In a mixing bowl, whisk together the flour, sugar, baking powder, salt, and cinnamon.
  • Beat in the egg and milk until the batter is smooth.

Cooking

  • Heat oil in a deep fryer or large pot to 375°F (190°C).
  • Dip each pineapple ring into the batter, ensuring it’s fully coated.
  • Fry the rings in batches, turning once, until they are golden brown, about 2 minutes per side.
  • Remove with a slotted spoon and drain on paper towels.
  • While still warm, dust the fritters with a mixture of cinnamon and sugar.

Serving

  • Serve warm and enjoy! Pair with whipped cream or vanilla ice cream.

Notes

Store leftover fritters in an airtight container in the refrigerator for up to 3 days. For freezing, place parchment paper between layers. Reheat in the oven at 350°F (175°C) for about 10 minutes.
