Preparation

  • In a medium bowl, whisk together the cream cheese and cooked, crumbled bacon.
  • In a separate small bowl, combine the crushed Doritos chips and beaten eggs.
  • Carefully butterfly each chicken breast, creating pockets for the stuffing.

Cooking

  • Stuff each chicken breast with the cream cheese and bacon mixture, sealing the edges securely.
  • Dip each stuffed chicken breast into the beaten eggs, allowing excess to drip off, then coat with the crushed Doritos chips.
  • Heat olive oil in a baking dish over medium heat.
  • Place the coated chicken breasts in the prepared baking dish.
  • Bake in the preheated oven at 375°F for 25-30 minutes, or until the chicken is cooked through and the coating is golden and crispy.

Notes
