Ingredients
  

Cookie Base

  • ½ cup unsalted butter, softened Use room temperature for better mixing.
  • 8 oz cream cheese, softened Ensure it's at room temperature.
  • 1 ½ cups granulated sugar
  • 2 large eggs Use room temperature for better mixing.
  • 1 tsp lemon extract
  • 1 lemon zested Use fresh lemon for best flavor.

Dry Ingredients

  • 2 ½ cups all-purpose flour
  • ½ tsp kosher salt
  • 1 Tbsp baking powder

Coating

  • ¾ cup powdered sugar For rolling the dough balls.

Preparation

  • In a large mixing bowl, beat the butter, cream cheese, and granulated sugar until smooth and creamy, about 3 minutes.
  • Mix in the eggs, lemon extract, and lemon zest until fluffy.
  • Stir in the flour, salt, and baking powder until a soft dough forms.
  • Cover the bowl with plastic wrap and refrigerate for 30 minutes to firm up the dough.

Baking

  • Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Scoop out dough using a 2 Tbsp cookie scoop. If the dough is sticky, dip your hands in powdered sugar first. Roll each dough ball in the powdered sugar until fully coated.
  • Place cookies on the prepared baking sheet, spacing them a couple of inches apart. Bake for 11-13 minutes, or until the edges are set but the centers are still soft.
  • Let cookies cool completely on a wire rack before serving.

Notes

Store the cooled cookies in an airtight container at room temperature for up to 5 days. To freeze, place cookies in a single layer on a baking sheet, freeze until firm, then transfer to a freezer-safe bag. Thaw at room temperature before serving.
