How to Make Orange Creamsicle Cheesecake

Ingredients:

  • 1 1⁄2 cups graham cracker crumbs
  • 1⁄3 cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 3⁄4 cup orange juice concentrate
  • 1 cup heavy cream
  • 1 teaspoon orange zest (optional)
  • 2 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • 16 ounces cream cheese, softened
  • 1 cup powdered sugar
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 2 teaspoons powdered gelatin
  • 3 tablespoons cold water
  • 1 package (3 ounces) orange-flavored gelatin dessert mix
  • 1 cup boiling water
  • 1⁄2 cup cold water

Directions:

  1. Prepare the Crust: In a bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined. Press the mixture evenly into the bottom of a 9-inch springform pan to form the crust. Chill the crust in the refrigerator while you prepare the filling.

  2. Create the Orange Cream Cheese Layer: In a small bowl, sprinkle the powdered gelatin over 3 tablespoons of cold water to bloom. Let it sit for 5 minutes. In a large bowl, beat the softened cream cheese and powdered sugar until smooth. Add the orange juice concentrate and orange zest (if using) and mix well. In another bowl, whip the heavy cream to stiff peaks. Gently fold the whipped cream into the cream cheese mixture. Microwave the bloomed gelatin for 10-15 seconds until dissolved, then fold it into the cream cheese mixture. Pour the orange cream cheese layer over the chilled crust and spread evenly. Refrigerate to set while preparing the next layer.

  3. Create the Classic Cheesecake Layer: Repeat the same steps as the Orange Cream Cheese Layer for the classic cheesecake layer. In a small bowl, bloom the powdered gelatin in 3 tablespoons of cold water. Beat the cream cheese and powdered sugar until smooth, then add vanilla extract. Whip the heavy cream to stiff peaks and fold it into the cream cheese mixture. Dissolve the bloomed gelatin in the microwave for 10-15 seconds before folding it in. Pour this layer over the set orange cream cheese layer and spread evenly. Chill while you prepare the Jello top layer.

  4. Prepare the Orange Jello Top Layer: In a bowl, dissolve the orange-flavored gelatin mix in 1 cup of boiling water, stirring until fully dissolved. Add 1⁄2 cup cold water and stir to combine. Let the Jello cool slightly before pouring it over the cheesecake layers. Refrigerate for at least 4 hours or until the Jello is fully set.

  5. Serve: Once set, carefully remove the cheesecake from the springform pan. Slice and serve your beautiful Orange Creamsicle Cheesecake. Enjoy every bite!
